Bademjan, eggplant, is the main ingredient besides\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Kashk which is derived from yogurt. You can find Kashk in all Persian shops, but in case you could not find a Persian grocery store nearby, vegan Greek yogurt or sour cream can easily be substituted with kashk.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><b>Needed ingredients to cook Kashke Bademjan (for 3 people)<\/b><\/p>\n<p><b><img fetchpriority=\"high\" decoding=\"async\" class=\" wp-image-43850 alignright\" src=\"https:\/\/www.tappersia.com\/blog\/wp-content\/uploads\/2020\/05\/Kashke-Bademjan-TAPPersia-4.jpg\" alt=\"Bademjan\" width=\"300\" height=\"225\" \/><\/b><\/p>\n<p><span style=\"font-weight: 400;\">3 peeled eggplants<\/span><\/p>\n<p><span style=\"font-weight: 400;\">4 tablespoons Kashk, or (vegan) Greek yogurt<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 large onions (peeled and diced in medium size)<\/span><\/p>\n<p><span style=\"font-weight: 400;\">3 minced cloves of garlic<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1\/3 cup chopped walnuts\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 tablespoon dried mint leaves<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00bd cup olive or\u00a0 cooking oil\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Salt, pepper, and turmeric<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Fresh mint leaves (optional)\u00a0<\/span><\/p>\n<p><b>Kashke Bademjan Recipe <\/b><\/p>\n<p><a href=\"https:\/\/www.tappersia.com\/blog\/wp-content\/uploads\/2020\/05\/Kashke-Bademjan-TAPPersia-5.jpg\" target=\"_blank\" rel=\"noopener noreferrer\"><img decoding=\"async\" class=\"alignleft wp-image-43851\" src=\"https:\/\/www.tappersia.com\/blog\/wp-content\/uploads\/2020\/05\/Kashke-Bademjan-TAPPersia-5.jpg\" alt=\"Bademjan\" width=\"303\" height=\"227\" \/><\/a>1- Peel off the eggplants and cut them in half or quarters lengthwise. Our suggestion is to Cut the eggplants into thick slices of five to seven centimeters.<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">2- Fry the peeled eggplants on both sides in vegetable cooking oil over a medium high heat until their color turns to golden brown. Adding a sprinkle of salt to eggplants before frying them can reduce the oil they usually absorb while frying.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"https:\/\/www.tappersia.com\/blog\/wp-content\/uploads\/2020\/05\/Kashke-Bademjan-TAPPersia-6.jpg\" target=\"_blank\" rel=\"noopener noreferrer\"><img decoding=\"async\" class=\"alignright wp-image-43852\" src=\"https:\/\/www.tappersia.com\/blog\/wp-content\/uploads\/2020\/05\/Kashke-Bademjan-TAPPersia-6.jpg\" alt=\"Bademjan 2\" width=\"300\" height=\"225\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">3- Mash the eggplants using a potato masher to small pieces in a different\u00a0 dish.\u00a0<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-43853 alignleft\" src=\"https:\/\/www.tappersia.com\/blog\/wp-content\/uploads\/2020\/05\/Kashke-Bademjan-TAPPersia-7.jpg\" alt=\"Bademjan\" width=\"300\" height=\"225\" \/><\/p>\n<p><span style=\"font-weight: 400;\">4- Process the walnuts to a very fine level but not into a paste.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">5- Cut the garlic into very small dice or instead mince it using a food processor into a paste.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\"><a href=\"https:\/\/www.tappersia.com\/blog\/wp-content\/uploads\/2020\/05\/Kashke-Bademjan-TAPPersia-8.jpg\" target=\"_blank\" rel=\"noopener noreferrer\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-43854\" src=\"https:\/\/www.tappersia.com\/blog\/wp-content\/uploads\/2020\/05\/Kashke-Bademjan-TAPPersia-8.jpg\" alt=\"Kashke Bademjan\" width=\"300\" height=\"225\" \/><\/a>6- Add minced garlic, water, kosher salt, cayenne pepper powder and freshly cracked black pepper to the skilled with fried eggplants, cover the top and slow cook it using low heat for about 15 minutes until the eggplants are very tender and the water is cooked off.
